Amount Measure Ingredient -- Preparation Method

6 perch filets -- chunked
2 cups flour
1 tablespoon cajun spice
2 tablespoons salad oil
2 eggs -- scrambled
1 cup monteray jack cheese -- shredded
1 cup favorite salsa
1 handful nacho chips
1/2 cup cherry tomato
1 cup artichoke hearts -- quartered
1/4 cup black olives
salt and pepper

Roll perch chunks into egg mix. Mix flour with cajun spice and a little
salt. Then place perch into flour mixture, shaking off excess flour.

Place oil in a hot pan, cook until golden brown.

Remove from the pan and place on the bed of nacho chips, Place
tomatoes, olives, artichoke hearts and salsa into the same pan and heat
for two minutes.

Place the hot mixture over the perch,nacho chips and top with the cheese.

Place in hot oven for one minute.
