SALMON WITH OPAL BASIL VODKA SAUCE

Amount Measure Ingredient -- Preparation Method


10 Ounces salmon -- sliced 1" thick
2 tablespoons opal basil -- chopped
3 roma tomato -- chopped
2 cups potato -- chopped fine
1 cup vodka
1 pint tomato sauce
1 cup green beans -- chopped
salt and pepper
2 tablespoons salad oil
1 cup flour

In a hot pan add oil, dust salmon in flour and place in pan. Add
tomato, potato and green beans. Let cook two minutes

Turn fish and strain off oil, add vodka and burn off alcohol. Add
tomato sauce, basil and season
