Amount Measure Ingredient -- Preparation Method
2 tablespoons salad oil
1/2 pound mushrooms -- sliced
1/4 cup onions -- chopped fine
1/2 cup dry white wine
1 cup heavy cream
1 pound salmon skinned and bonless -- cubed
1 tablespoon parsley -- chopped
1 tablespoon fresh dill -- chopped
4 tablespoons butter
1 cup sour cream
1 cucumber -- peeled, deseeded and chopped
salt and whitepepper
In a sauce pan add oil, then the mushrooms and onions.
Cook until the onions are clear, add the wine.
Then add cream, sour cream and reduce by half.
Add salmon, parsley and dill.
Poach for about ten minutes then finish with salt and pepper.
Before serving add butter.
