Amount Measure Ingredient -- Preparation Method


2 six ounce fillets
1/2 fresh lemon juice
1/4 cup all pourpose flour
1 tablespoon paparika
1/2 pre roasted red pepper -- cut into strips
1/4 cup dry sherry
3 tablespoons salad oil
2 ounces whole butter
salt and white pepper

Mix salt, pepper and paprika together.

Pad both sides of the fish fillets dry, dust in flour.

Place oil in hot pan, cook the fish browning both sides.

Remove the fish from pan, add red pepper strips, lemon juice and Sheri.

Let simmer one minute then add the butte. Mix well and place over the
filets.
