Amount Measure Ingredient -- Preparation Method

2 8 ounce white fish filets
2 tablespoons fish dry rub (see recipe in book)
2 tablespoons butter
1 onion -- diced
1 tablespoon garlic -- minced
1/2 red pepper -- diced
2 roma tomatoes -- diced
1/8 cup cilantro -- chopped
1 cup red wine
salt and pepper
1/4 cup vegtable oil

In a hot pan add salad oil and place the fish in the pan. Cook until
golden brown then flip and do the other side.

Saute onion, red pepper and butter until the onions are clear.

Add red wine and reduce by half.

Add tomato and half the cilantro.

Saute until slightly thicken, season with salt and pepper and serve
over the fish.
