Amount Measure Ingredient -- Preparation Method

12 ounces 4- three ounce cutlets
1 whole pear -- sliced thin
1 cup red cabbage -- sliced
1/2 teaspoon thyme
1 cup apple juice
1/4 cup whole butter
2 tablespoons salad oil
2 slices bacon -- chopped
1 pinch crused red pepper spice

In a hot pan add oil and pork cutlets, season with salt and pepper.
Cook until brown slightly pink inside and remove from the pan.

Add bacon and cook until almost crisp, then add pears and cabbage. Let
cook until cabbage is tender.

Remove the excess grease and add the apple juice, crushed red pepper
and thyme. Let reduce by half, remove from the stove and add the butter.
Continue to mix and check the seasoning.
