PAN FRIED HALIBUT W/ MANGO AND FRENCH DRESSING

Amount Measure Ingredient -- Preparation Method

2 8- ounce halibut filets -- 1-inch thick
1/2 banana pepper -- sliced
1/4 red onion -- sliced
1 tablespoon cilantro, fresh -- chopped
1/2 mango -- chopped
1/8 cup french dressing
salt and pepper
2 tablespoons salad oil

In a hot pan add oil, season fish with salt and pepper and place in the
pan.

Cook half way, then turn over and add veggies and mango.
Let cook until onions are clear.

Strain off the excess oil then add french dressing, let simmer two
minutes.
